2 cups Frozen broccoli and cauliflower blend, thawed
1/2 cup Orange juice
1/4 cup Soy sauce
3 Tbsp Cornstarch + 1 Tbsp Cornstarch (add more if your sauce is too thick)
Step 1: If you are serving the dish right away, set aside 1/4 cup of the orange juice and 3 Tbsp cornstarch. Put tofu, broccoli and cauliflower, soy sauce, orange juice, and cornstarch in a blender. Add more soy sauce to taste. Blend until smooth.
Step 2: In a pot over medium heat add the remaining 3 Tbsp cornstarch and 1 Tbsp of cornstarch into the pan and cook until thickened. Add tofu mixture to the pot and cook on medium-high heat until heated through. Add additional orange juice if needed to thicken the sauce.
Step 3: Serve over rice, quinoa or noodles. You can even serve it over shredded cabbage! Garnish with sliced green onions for colour and flavour contrasts.
