Step 1: Place ground chicken in a medium bowl. Stir in all other ingredients and mix well. Cover and refrigerate for at least 12 hours.

Step 2: When ready to cook, preheat oven to 350 degrees f (175 degrees c).  Line a baking sheet with parchment paper.

Step 3: Remove the marinade from the refrigerator and use your hands to roll the chicken mixture into balls (approximately 1 1/2 inches in diameter). Place balls on a parchment-lined baking sheet, leaving space between them.

Step 4: Bake for 20-25 minutes or until cooked through.  Serve with your favourite taco toppings!
